Keto-Friendly Zucchini Patties

Harvest time is one of my favorite times in the garden.  All of our hard work is paying off is beautiful squash, juicy tomatoes and crispy Radish.

This is one of my favorite Harvest Recipes!



Keto-friendly zucchini patty recipe


Ingredients:
1 large zucchini (1 pound), shredded with a cheese grater
4 eggs
salt and pepper
Optional: shredded cheese

 Directions:
Once you shred the zucchini, let it sit to remove liquid. (Approx 5 minutes)
*I let mine sit in a colander inside of a bowl*


Squeeze out all liquid.

Mix zucchini, eggs, salt and pepper in a large bowl
Optional: add shredded cheese to the mix

Cook in olive oil approx 4 minutes each

Serve hot with Spicy Mayo
